Creamy White Chicken Chili
Ingredients
- 1 Tbsp vegetable oil
- 2 lbs chicken cubed
- 1 onion chopped
- 1 Tbsp minced garlic or 1 tsp garlic powder
- 2 cans white beans rinsed
- 4 oz green chiles
- 2 tsp ground cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- 2 cups chicken broth
- 4 oz cream cheese
- salt and pepper to taste
Toppings
- shredded cheese
- green onion
- sour cream
Instructions
- In a large pot, over medium-high heat, add oil, chicken, onion, and garlic. Saute until chicken is cooked and onions are soft.
- Add remaining ingredients to the pot and bring to a boil. For a smoother consistency, blend cream cheese with chicken broth before adding.
- Once boiling, reduce heat and simmer for 30 minutes.
- Add toppings and enjoy!

ALL 5 of my kids loved this! My husband and I too! So good and easy to make! I’m making it again tonight, and we’re doing it with your artisan bread this time. I’m excited to try it! We didn’t have any white beans, so I used pinto beans instead and it was good. Maybe not as creamy, but we still loved it. I used my older (but still good) Costco rotisserie chicken, and some leftover chopped tomatoes too for a shelf cooking win.
My wife made this for dinner and it was fantastic!
