½ - 1tspchili powder
Peel and cut carrots into 1-2 inch slices.
Coat with olive oil then season with salt and pepper. Add other chosen ingredients.
Bake on a parchment paper-lined sheet pan at 400°F for 30-40 minutes, or until golden brown on the edges and soft throughout.
Double or triple this recipe and freeze the leftovers! Allow to cool and add meal-sized portions to freezer bags and freeze. Thaw overnight in the fridge, then reheat at 400°F for 10-15 minutes or until heated through.
