Perfectly Roasted Carrots

Ingredients

  • 2 lbs carrots
  • 2 Tbsp olive oil
  • ½ tsp salt
  • Pepper to taste

FOR SWEET ROASTED CARROTS

  • ½ tsp ground cinnamon
  • ¼ cup honey

FOR SAVORY ROASTED CARROTS

  • 2 cloves minced garlic
  • ½ tsp oregano
  • ½ tsp thyme

FOR SPICY ROASTED CARROTS

  • ½ - 1 tsp chili powder
  • ½ tsp ground cinnamon

Instructions

  • Peel and cut carrots into 1-2 inch slices.
  • Coat with olive oil then season with salt and pepper. Add other chosen ingredients.
  • Bake on a parchment paper-lined sheet pan at 400°F for 30-40 minutes, or until golden brown on the edges and soft throughout.

Notes

Double or triple this recipe and freeze the leftovers! Allow to cool and add meal-sized portions to freezer bags and freeze. Thaw overnight in the fridge, then reheat at 400°F for 10-15 minutes or until heated through.
