Easy-Peasy Lemon Cake Mix Cookies

These light and easy cookies are the perfect springtime treat!

Ingredients

FOR THE COOKIES

  • 1 (15.25 oz) lemon cake mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup white chocolate chips

FOR THE ICING

  • 1 cup powdered sugar
  • 2 Tbsp lemon juice or milk

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, mix together cake mix, vegetable oil, and eggs. Fold in white chocolate chips.
  • Using a 1½ inch sized cookie scoop, drop balls of dough onto a cookie sheet and bake for 7-10 minutes, or until cookies look firm.
  • Remove cookie sheet from oven and allow cookies to sit for 5 minutes before placing on a wire rack to cool completely.
  • In a small bowl, mix icing ingredients together until smooth.
  • Drizzle icing over cooled cookies and enjoy!

Notes

For a completely different cookie, you can try this recipe with other cake mix flavors and chocolate chips! For a strawberries and cream cookie, try strawberry cake mix + white chocolate chips. For chocolate peanut butter, use chocolate cake mix + peanut butter chips. Or for a colorful birthday cookie, use Funfetti cake mix + Funfetti chips (yes, they're a thing!).
