Easy Sweet Potato Breakfast Hash

Ingredients

  • 1 sweet potato
  • ½ onion, diced
  • 3 tbsp oil
  • 1 tbsp minced garlic
  • 2 hard-boiled, fried, or scrambled eggs
  • salt & pepper, to taste

Instructions

  • Wash and cube sweet potato.
  • Sauté onion in 3 Tbsp oil on medium-high heat with 1 Tbsp minced garlic for 1-2 minutes, until onion begins to get soft and translucent.
  • Add sweet potato and cook until potatoes have reached desired softness.
  • Transfer into bowl of choice, top with egg.
  • Season with salt & pepper to taste.

Notes

You can freeze some of the potato mixture for later. Just warm in the microwave and top with a fresh egg!
