Easy Sweet Potato Breakfast Hash
Give this super easy, filling, and delicious breakfast bowl a try, and you'll be hooked!
hard-boiled, fried, or scrambled eggs
salt & pepper, to taste
Wash and cube sweet potato.
Sauté onion in 3 Tbsp oil on medium-high heat with 1 Tbsp minced garlic for 1-2 minutes, until onion begins to get soft and translucent.
Add sweet potato and cook until potatoes have reached desired softness.
Transfer into bowl of choice, top with egg.
Season with salt & pepper to taste.
You can freeze some of the potato mixture for later. Just warm in the microwave and top with a fresh egg!
