Ingredients

PEACH FILLING

  • 2 cups fresh peaches, sliced*
  • 1 cup sugar
  • 1 cup water

BATTER

  • ½ cup butter (1 stick)
  • 1 cup self-rising flour**
  • 1 cup milk
  • 1 cup sugar
  • cinnamon, for sprinkling optional

FOR SERVING

  • Vanilla ice cream or whipped cream

Instructions

PREPARE THE FRESH PEACH FILLING

  • Wash and slice the fresh peaches. Peeling the skins off is optional.
  • Mix 2 cups peach slices with one cup sugar and one cup of water.
  • Bring the mixture to a boil and then reduce heat and simmer for about 10 minutes.
  • Stir often to make sure the sugar dissolves completely.

MAKE THE COBBLER

  • Preheat the oven to 350°F.
  • Place the butter in a 9 x 12" oven-safe baking dish. Heat the butter in the oven until it's melted.
  • In a medium bowl, mix the flour and 1 cup sugar.
  • Slowly add milk and continually stir to keep the batter from lumping.
  • Carefully remove the hot baking dish from the oven, and pour the batter directly over butter in the dish. Do NOT stir.
  • Spoon your fruit on top of the batter, then gently pour the syrup (or reserved syrup from canned peaches) on top. Do NOT stir.
  • Optional - If desired, sprinkle cinnamon on top of batter. Do NOT stir.
  • Bake in the oven for 30-45 minutes or until golden brown. The batter will rise above the fruit and create a delicious crust.
  • Serve warm with vanilla ice cream or fresh, homemade whipped cream.

Notes

*If you don't have fresh peaches, substitute 2 15-oz. cans of sliced peaches in syrup. Drain one can and reserve the syrup from the second can for use in the dish.
**If you don't have self-rising flour on hand, you can substitute 1 cup of all-purpose flour mixed with 1 ½ teaspoons baking powder and teaspoon salt.
