Easy Fruit Salsa

You don't need a single tomato for this batch of sweet salsa. Serve it as an appetizer or a healthy(ish) snack!

Ingredients

  • 2 kiwis, peeled and diced
  • 2 mangoes, peeled and diced
  • 1 cup raspberries
  • 2 cups strawberries, diced
  • 2 tbsp white sugar
  • 1 tbsp brown sugar
  • 3 tbsp strawberry preserves
  • ½ sweet onion, diced optional

Instructions

  • Wash, peel, and dice fruit.
  • Add fruit to a large mixing bowl, and stir in the sugar and preserves. Mix thoroughly, then cover with a lid or plastic wrap and refrigerate for 30 minutes.
  • Serve with your favorite chip or cracker and enjoy!

Notes

Pro Tip: This salsa tastes incredible with sweet potato tortilla chips! Buy them, or make your own sweet potato chips in the oven. Just thinly slice a sweet potato, drizzle with olive oil, and bake at 400˚F for 30 minutes, flipping halfway through.
