Is there anything better than a juicy and ripe peach at the height of harvest season? We don't think so, either. They are so good that there was an entire episode of Seinfeld devoted to the quest for a perfectly ripe peach.

NO PEACHES ON-HAND? MIX IT UP WITH ANOTHER VARIATION

This recipe is absolutely delicious as is, with a scoop of vanilla ice cream, or with homemade whipped cream on top. However, if you have other seasonal fruit that needs to be used up, you can create an UH-MAZING, unique dessert by substituting out the peaches. Here are a few of our favorite fruit variations you can try:

  • Blackberries
  • Blueberries
  • Raspberries
  • Strawberries
  • Rhubarb
  • Apples (sweeter varieties are better)
  • Mango
  • Pineapple

FREEZE AHEAD FOR COBBLER YEAR-ROUND

two bowls of peach cobbler, from Shelf Cooking

If you are lucky enough to have peach trees at home, you probably have more peaches available than you know what to do with. You can set yourself up for delicious desserts year-round by prepping several cobblers' worth of peaches at a time and freezing them for later.

Just wash and slice your ripe peaches in bulk, then place 2 cups of fruit into a freezer bag along with one cup of sugar. Seal and shake it like a polaroid picture, then store it flat in the freezer.

When you are ready to cook up a cobbler, let the fruit filling thaw in the fridge before adding it to the recipe.

STORING LEFTOVERS

In the very unlikely instance that you have leftovers of this dessert, it's easily stored for later. Simply cover the cooled baking dish with an airtight lid or plastic wrap and store in the refrigerator for 3-4 days. Simply reheat the dessert in the microwave and serve.

HOW TO MAKE THIS EASY DESSERT

Ingredients

PEACH FILLING

  • 2 cups fresh peaches, sliced*
  • 1 cup sugar
  • 1 cup water

BATTER

  • ½ cup butter (1 stick)
  • 1 cup self-rising flour**
  • 1 cup milk
  • 1 cup sugar
  • cinnamon, for sprinkling optional

FOR SERVING

  • Vanilla ice cream or whipped cream

Instructions

PREPARE THE FRESH PEACH FILLING

  • Wash and slice the fresh peaches. Peeling the skins off is optional.
  • Mix 2 cups peach slices with one cup sugar and one cup of water.
  • Bring the mixture to a boil and then reduce heat and simmer for about 10 minutes.
  • Stir often to make sure the sugar dissolves completely.

MAKE THE COBBLER

  • Preheat the oven to 350°F.
  • Place the butter in a 9 x 12" oven-safe baking dish. Heat the butter in the oven until it's melted.
  • In a medium bowl, mix the flour and 1 cup sugar.
  • Slowly add milk and continually stir to keep the batter from lumping.
  • Carefully remove the hot baking dish from the oven, and pour the batter directly over butter in the dish. Do NOT stir.
  • Spoon your fruit on top of the batter, then gently pour the syrup (or reserved syrup from canned peaches) on top. Do NOT stir.
  • Optional – If desired, sprinkle cinnamon on top of batter. Do NOT stir.
  • Bake in the oven for 30-45 minutes or until golden brown. The batter will rise above the fruit and create a delicious crust.
  • Serve warm with vanilla ice cream or fresh, homemade whipped cream.

Notes

*If you don't have fresh peaches, substitute 2 15-oz. cans of sliced peaches in syrup. Drain one can and reserve the syrup from the second can for use in the dish.
**If you don't have self-rising flour on hand, you can substitute 1 cup of all-purpose flour mixed with 1 ½ teaspoons baking powder and teaspoon salt.
